Patina & Rust
High-carbon steel will develop an “oxidation layer (Patina)” upon contact with acidic foods. This is a protective film sought after by enthusiasts. If red rust appears, wipe it immediately with a soft cloth and polishing paste.
Cleaning
Dishwashers are strictly prohibited. High temperatures and strong alkalis will destroy the microscopic structure of the blade and crack the wooden handle. Hand wash only and dry immediately.
