Metallurgy & Craft

How to verify the authenticity of Damascus steel?
Nuomei Store uses true folded forged Damascus or powder metallurgy Damascus. Real patterns run through the entire block of metal, rather than surface laser etching. You can observe the spine and tang where the patterns remain continuous and natural. Additionally, every blade is accompanied by a metallurgical report of its steel composition.
What is Rockwell Hardness (HRC)?
HRC is a metric used to measure the hardness of steel. Our chef knives are typically maintained between HRC 61-63. This hardness provides exceptional edge retention but requires the user to have better maintenance skills—avoid cutting bones or frozen food to prevent chipping.
Why is your blade edge set at 15 degrees?
A 15-degree angle per side (total 30 degrees) is the “Golden Balance” between extreme sharpness and durability. For handling high-end ingredients, this angle cuts through fibers like a laser without damaging cell walls, preserving the original juice and texture of the food.

Care & Maintenance

Patina & Rust

High-carbon steel will develop an “oxidation layer (Patina)” upon contact with acidic foods. This is a protective film sought after by enthusiasts. If red rust appears, wipe it immediately with a soft cloth and polishing paste.

Cleaning

Dishwashers are strictly prohibited. High temperatures and strong alkalis will destroy the microscopic structure of the blade and crack the wooden handle. Hand wash only and dry immediately.

How often do I need to sharpen my knife?
It depends on your frequency of use. For professional chefs, we recommend weekly stropping; for home users, professional whetstone sharpening is needed every 6 to 12 months. Nuomei Store provides lifetime free sharpening services for all sold products.
What type of cutting board is best for the blade?
We strongly recommend using End-grain wood boards or high-quality synthetic rubber boards (like Asahi). Strictly avoid cutting on glass, marble, or stainless steel surfaces, as these hard materials will instantly roll the extremely thin edge.

Shipping & Legal

Do you ship to regions with strict legal restrictions?
We are familiar with knife laws in most parts of the world (e.g., UK, Australia, Singapore). Before shipping, we check if your order complies with local restrictions regarding blade length or locking mechanisms. If it doesn’t, we will contact you for adjustments or a refund.
Is the cutlery safe during transit?
All knives are wrapped in high-strength blade protectors, placed in custom shock-resistant collection boxes, and shipped in unmarked anonymous packaging to prevent theft during transit. All parcels are fully insured.

Lifetime Performance

Does the warranty cover a broken tip?
Our warranty covers fractures caused by steel defects or improper heat treatment. However, broken tips are usually caused by drops or prying, which are not covered by the free warranty. Our craftsmen can provide a “regringing” service for a basic material fee.
Can I return a custom-engraved knife?
Non-custom products enjoy a 14-day no-reason return policy. Since custom engraving makes a product unique, it cannot be returned unless there are serious quality defects. We suggest carefully confirming the design before customization.
